A long, cold, wet winter in 2023 set the stage for even budbreak and steady canopy growth. Moderate spring and summer temperatures allowed slow, even ripening, yielding wines of precision and restraint. The 2024 Baviaan is a vibrant, textured white blend that showcases its terroir and meticulous cellar work.
Winemaking Notes
Each varietal was vinified separately in old French oak barrels and blended after 9 months on lees. No malolactic fermentation was encouraged in order to preserve acidity and freshness. Bottled unfiltered to retain natural character.
Tasting Notes
Aromatic layers of white peach, jasmine, and orange blossom unfold on the nose. The palate is textured and balanced with bright acidity, citrus zest, and a saline edge leading to a long, mineral finish.
