Vinification
The grapes are carefully selected from specific blocks, picked early in the morning to preserve the beautiful fruit flavours, and pre-cooled before crushing. The juice is lightly pressed and cold-fermented for 3 weeks. The wines are matured in barrel for at least 6 months and then racked to stainless steel tanks before bottling.
Winemaker’s Comment
Nose: Ripe pineapple and peaches dominate the nose, with butterscotch and vanilla as it opens up.
Palate: On the palate, there is custard, crème brûlée, and even butterscotch. The ripe fruit flavours overwhelm the midpalate. This is a full, bold white wine that will pair well with a wide variety of food styles. The wine will age well, and the good acidity will contribute to the great structure of the wine. My recommendation would be a pairing with paella, Thai curry, and most white meat dishes.
