Origin

The Chardonnay is sourced from a farm outside of the famous Hemel-en-Aarde Valley, direction Caledon and some 8 km from the ocean. This wine represents my first exposure to Overberg fruit.

Winemaking

After harvesting the fruit is cooled overnight before transport to Firgrove, Somerset West. The grapes are sorted on an incline conveyor and goes directly into a pneumatic press without any crushing/destemming. We recover ca 630 L of juice/ton of grapes. The juice is partially settled overnight and will go into concrete Tanks the next day and inoculated with pure culture yeast. I will allow the yeast to ferment 1/3 of the sugar content before transferring to 228 L barrels, all French and 30% new. We do a daily batonnage even during fermentation and will continue to do so for the next 100 days after completion of fermentation. After 100 days we transfer 50% of the barrels to the tank for a fruitier component. The wine was blended and bottled after 9 months.

100% Chardonnay, 2 clones CY 5 & CY 95A, Overberg wine of origin.

Winemaker's Notes

We picked the fruit last week of February and the biggest challenge was to avoid rain at that time.  The wine is simply beautiful with stone fruits, citrus and white blossoms, good minerality and great fruit wood integration. drink now or over the next 5+ years. Do not serve cooler than 12-14 degrees C. 

Total production was 3300 bottles.
