The Brut is made from Chenin Blanc and it shows how versatile this cultivar can be. The wine fermented dry in small oak French barrels and was left there for 12 months. The wine was then bottled, yeast added again, and left in the bottle on the lease for 4 years. Thereafter it was riddled for 4 weeks in old traditional riddling racks. The wine was disgorged and topped up with the winemaker’s special selection.
The mousse is very fine and elegant. The nose is reminiscent of baked bread, yeast, and green apple. On the palate, there is a sensation of small elegant bubbles with a creamy biscuit flavor. The wine has a very clean crisp dry finish on the palate.
